What sexers do:
Poung pullets (female chicks) are virtually iimpossible to distinguish from cockerels (male chicks). And yet the sexing of younfg chicks a few hours after their birth is one of the essential operations in modern hatcheries. Breeders and farmers need to know the sex of the newly hatched chicken to match their sex to their expected destination (reproducers, broilers, etc.).
Two methods have been developped for sexing: cloaca and wing. Although different, both methods rely on the observation of anatomical traits difficultly perceptible to the untrained eye.
Cloaca sexing relies on flipping over the chick to examine its underside, exposing the cloaca which is the vent where both the anus and genital organs are located. The sexer must distinguish the smaller vent muscles of the female from the larger male ones. It is a rapid and painless intervention (taking less than 4 seconds) for the chick but it calls for rare technical mastery. This method was invented in Japan in the 1920's and the best specialists (including Mr Maruta, founder of ESAF) have been trained in the Japanese school.

Wing sexing is even faster, but unlike cloaca sexing, it can only be practiced on pre-selected varieties aka self-sexing breeds which present distinct external traits at birth (wing feathers) according to their sex.
Sexing is not a capital-intensive activity: our equipment can be limited to a powerful electric lamp and a mask for dust, and that is why we can send our teams anywhere at short notice. But nothing in our experience can replace the know-how of our sexers, the result of countless hours practising our trade. ESAF sexers can sex upwards of 1000 chicks per hour with no more than a 1% error margin.
